FOR THE BATTER
100 g | sugar |
1 tbs | vanilla sugar |
2 | eggs (size M) |
200 g | flour |
2 tbs | baking soda |
3 – 4 tbs | milk |
500 g | apples (about 3) |
FOR THE CRUMBLE
150 g | flour |
3 tbs | sugar |
1 tbs | vanilla sugar |
80 g | butter |
1 ts | cinemon |
- For the batter, cream the butter with both types of sugar for a few minutes. Gradually stir in the eggs. Mix the flour with the baking powder and add to the egg mixture alternately with the milk. Mix everything into a smooth batter.
- Preheat the oven to 180 degrees. Line 12 wells of a muffin tin with muffin cases. Peel and roughly chop the apples. Fold two thirds of the grated apple into the batter. Using an ice cream scoop, fill the batter into the muffin cups. Spread the remaining grated apples over the muffins.
- For the crumbles, first knead all the ingredients into coarse crumbles with the dough hook of the hand mixer and then, if necessary, with your hands. Scatter the sprinkles over the muffins. Bake the muffins in the preheated oven for about 25 minutes until golden brown. Leave to cool completely.
